This is a pistachio cookie cayk with lemon balm pastry and diplomat cream, cherry plums, honeynut squash cake, and lemon marzipan flowers. The lemon balm from @radical.shoots were incredible in this.

I rarely turn down a good challenge. But when I was asked to make a dessert with Vegemite (that salty, yeasty spread that Aussies whack on toast with butter), I almost couldn’t bring myself to do it. BUT…if it was possible, I had to know.

This was hands-down the weirdest, wildest, most challenging bake I’ve tackled yet—and somehow, it actually kind of works?? I guess that’s still up for debate. Sweet, salty, and a little unhinged… kinda like me.

I’m pretty serious about dessert…

Curious flavors. Intriguing textures. Elements of surprise. A dessert can be a journey.

But it’s also…just dessert. Dessert is intended to be celebratory and joyous, or at the very least, offer a sense of levity (especially in weird times like now). For me, the process of creating and composing desserts should be just as whimsical and fun as eating it and the table on which it’s eaten.

People often ask me how I come up with the flavor profiles for my desserts. And honestly? I usually start with the spices and work backwards. Sometimes I’ll go into a spice shop, smell around, and decide “I want THAT in a dessert” (hello lemon myrtle from @surajspicesandteas , you’re next). Or I’ll think about a savory dish or dip I love and think, “why does that work, and how can I transform that idea into a dessert?” Sometimes, I also get challenged to make something with a wild ingredient (speaking of which, I have a challenge I’ve been putting off for a while now…so stay tuned for details on that - I haven’t forgotten about you @shebs_12_ )…and though I don’t get opportunities to be competitive very often, I LOVE a good challenge.

I have some fun summer projects in the works and I’m excited to share them with you all soon. Stay curious. 😚

This week, I tried out a new format of this cookie cayk and brought it to some new industry friends to taste test! It’s marzipan wrapped white chocolate macadamia nut cookie, curry peach jam, lime Italian buttercream, and a peach puffed rice crispy.
